Key Responsibilities (International Standards) Bar Leadership & Training: Lead the barista team. Train junior staff on milk texturing, latte art, espresso extraction, and customer service. Write and enforce bar SOPs (opening/closing checklists, cleaning schedules). Daily Espresso Calibration (Dialing In): Manage daily calibration of grinders and the espresso machine. Adjust grind size, dose, yield, and extraction time to account for changes in daily humidity and temperature. Menu Development & Innovation: Design and launch creative signature mocktails, specialty coffee drinks, and seasonal menus that align with the premium Fuoco brand. Bean & Inventory Management: Demonstrate comprehensive knowledge of different coffee origins (e. g. , Ethiopian, Colombian, Brazilian), processing methods (washed, natural, honey), and roast profiles. Track milk and bean inventory to prevent stockouts. Quality Control & Consistency: Ensure every cup served meets exact brew parameters. Monitor milk texturing to guarantee silky, micro-foam texture for milk-based drinks. Equipment Maintenance & Hygiene: Ensure the bar station follows strict HACCP hygiene rules. Oversee deep cleaning of the espresso machine (backflushing with group head cleaner), grinders, and under-counter chillers daily. TECHNICAL SKILLS Deep understanding of Brew Ratios (e. g. , 1:2 extraction ratios) and extraction variables (time, yield, temperature, water quality). Proficiency in manually operating commercial multi-boiler espresso machines (e. g. , La Marzocco, Nuova Simonelli, Sanremo) and professional grinders (e. g. , Mahlkönig, Mazzer). Excellent manual skills in micro-foaming and basic-to-advanced latte art (Rosetta, Tulip, Heart). Strong communication and leadership skills; ability to document workflows into simple step-by-step instructions (SOPs).
